Marinades continued

The GOOD news about using marinades.
The GOOD news is dairy prpoducts are the only marinades that truly tenderize:  Buttermilk and Yogurt!
******Hunters have known this for a long time and this is why they marinate tough game in milk.
******East Indian recipes use yogurt marinades for lamb and other meat.
******Southern Cooks almost always soak chicken in buttermilk before frying. 
 
How Long to Marinate? Consider the texture of the meat or fish.  In general, open-flesh like fish fillets needs only a few minutes of soaking.  Food with tighter texture, such as chicken or lamb, can tolerate several hours in a marinade, even ont that is mildly acidic.
